Apple Fritters
Ingredients:
1 ½ cups all-purpose flour
¼ cup granulated sugar
2 teaspoons baking powder
½ teaspoon salt
1 teaspoon cinnamon
⅓ cup milk
2 large eggs
1 teaspoon vanilla extract
2 cups peeled and diced apples (Granny Smith or Honeycrisp work great)
Vegetable oil for frying
Glaze:
1 cup powdered sugar
2 tablespoons milk
½ teaspoon vanilla extract
Instructions:
In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
In a separate bowl, combine milk, eggs, and vanilla extract. Pour the wet ingredients into the dry mixture and stir until just combined.
Fold in the diced apples until evenly distributed throughout the batter.
Heat about 2 inches of oil in a deep skillet or pot over medium heat to 350°F (175°C).
Drop spoonfuls of batter into the hot oil, frying 2–3 fritters at a time. Cook for about 2–3 minutes per side, or until golden brown and crisp.
Remove with a slotted spoon and drain on paper towels.
In a small bowl, whisk together powdered sugar, milk, and vanilla until smooth.
Dip each warm fritter into the glaze or drizzle it over the top. Let them set for a few minutes before serving.
