
My husband is from the South, and over the years he’s casually mentioned these little zucchini stacks more times than I can count. Every time he brought them up, his eyes would light up like he was talking about childhood summers and family cookouts.
So one afternoon, curiosity finally won.
I picked up the phone and called my mother-in-law.
“Can you tell me how you make those zucchini things?”
She laughed and said, “Oh honey, those? They’re easy.”
And she was right.
The first time I made them, my husband walked into the kitchen, took one bite, and just smiled. That was all the confirmation I needed. These crispy, cheesy zucchini stacks are officially a new staple in our house.
They’re simple, comforting, and dangerously addictive. Perfect as a snack, side dish, or even a light lunch — and honestly, they disappear faster than I can make them.
🥒 Southern Zucchini Cheese Stacks
Ingredients
2 medium zucchini
1 to 1½ cups shredded cheese (cheddar, mozzarella, or a blend — MIL prefers sharp cheddar)
1 cup all-purpose flour
2 eggs, beaten
1 cup breadcrumbs or panko
Salt and pepper, to taste
Optional: garlic powder or paprika
Oil for frying (vegetable or olive oil)
Instructions
Slice the zucchini
Cut zucchini into thick, even rounds (about ½ inch thick).
Build the stacks
Lay out half the zucchini slices. Add a small mound of shredded cheese on each, then top with another zucchini slice to make little sandwiches.
Prepare your coating station
Set up three bowls:
Flour seasoned with salt and pepper
Beaten eggs
Breadcrumbs (add garlic powder or paprika if you like extra flavor)
Coat the stacks
Dip each zucchini stack into flour, then egg, then breadcrumbs, pressing gently so everything sticks.
Fry until golden
Heat oil in a skillet over medium heat. Fry stacks for about 2–3 minutes per side, until golden brown and crispy.
Drain and serve
Place on paper towels to remove excess oil. Serve warm while the cheese is melty and perfect.
Serving Ideas
Dip in ranch, marinara, or garlic aioli
Pair with grilled chicken or burgers
Enjoy straight off the plate (my personal favorite)
